‘I love the earthy smell of the fruits and vegetables for sale in the market square of many small Polish towns. Farmers come daily to sell their produce: unwashed carrots and beetroot, cabbages and onions. It is OK here to feel the potatoes, squeeze a parsnip or sniff a bunch of garlic for a quick high. There’s no need to label the produce ‘organic’ - there is no other kind of farming here - and it is all truly seasonal’.
